Strawberry and maple spinach salad

Each year, we all look forward to eating Quebec's strawberries. When fresh-picked, the bright red fruits are juicy and divinely tasty. 

Strawberries are an excellent source of vitamin C, a fragile vitamin. To preserve their nutritional value, it's better to cut them just before serving. 

 

INGREDIENTS

Dressing

  • 30 ml (2 tbsp.) of grapeseed oil or another vegetable oil
  • 30 ml (2 tbsp.) of maple syrup
  • 30 ml (2 tbsp.) of apple cider vinegar
  • 5 ml (1 tsp.) of poppy seeds

Caramelized pecans 

  • 250 ml (1 c.) of pecan halves
  • 15 ml (1 tbsp.) of butter
  • 15 ml (1 tbsp.) of maple syrup

Salad (for 1 person)

  • 1 bowl of baby spinach (washed and dried) 
  • 3 or 4 Quebec strawberries (washed)
  • 60 ml (¼ c.) of caramelized pecans 
  • 15 ml (1 tbsp.) of maple dressing

     

INSTRUCTIONS

Dressing

  1. In a bowl, mix all ingredients vigorously. 

Caramelized pecans

  1. In a small pan, brown the pecans in butter until they start to roast. 
  2. Add the maple syrup and keep cooking for 2-3 minutes. Remove from stove.

Salad (for 1 person)

  1. Fill a bowl with baby spinach (washed and dried).
  2. Dress with sliced strawberries and caramelized pecans.
  3. Shake dressing and pour about 15 ml over the salad.

This refreshing salad is the perfect starter to impress your guests. Complete the meal with your favourite grilled meats and potatoes.
